Tasting Notes
There are some attractive aromas on this wine, including those of granny smith apples and mandarin orange (the Orange Muscat's contribution). Like most Rieslings, this wine has some pretty bracing (while it is young), and refreshing acidity that sits well with the Okanagan tree fruit flavours. That same acidity provides for a long lemon finish.
Notes on Fermentation
Both the Riesling and the Orange Muscat were fermented separately, but similarly. Both were fermented cool and to dryness with a Rheingau isolate yeast which is particularly good at retaining the fresh fruit character of the aromatic varieties. As is best practice for aromatic varieties, the wine was immediately racked from its lees following fermentation. Other than stabilization and clarification, no further manipulations were exercised with this wine prior to bottling.
