Tasting Notes
The Chenin Blanc and Ehrenfelser really dominate the aromas and flavours in this blend, with the Chenin bringing its grapefruit and honey and the Ehrenfelser its pure peach. The wine is dry, a wee bit tart, and extremely refreshing with its light prickle of CO2 on the palate. Like all our wines, this is a natural with food, but the winemaker discovered, by accident, that it will easily slake the greatest thirst. Serve cold.
Notes on Fermentation
There are too many vineyard lots involved in this wine to get into much detail but the broad strokes would be . . . Aromatics were the focus in each lot using yeast strains that bring this out and keeping the fermentations as cool as possible (11 - 13 deg. C) to preserve the fruit. The small amount of Chardonnay was barrel fermented in 3 year old French barrels but everything else stayed in stainless steel. The wine was kept quite cool throughout its life in tanks to help preserve the natural CO2 in solution and all lots were racked from their heavy and light lees and cleaned up as soon as was practicable. Three words describe everything about the winemaking of this wine; Clean, Clean, Clean.
